When you place an order you will have three options; whole, half or quarter. When ordering a quarter it is often a misconception that you will only receive a fore quarter or hind quarter. With us you will receive instead a quarter of every available cut from the cow. This means that if there are a total of 8kg of sirloins you would collect 2kg, similarly if there are 4kg of eye fillets you would receive 1kg in your quarter share.

Once you have expressed your interest via email, you will be sent a link to a form that allows you to select how you would like each cut butchered. We provide 2-6 different styles cuts (ranging from mince to roasts for each section of the cow). Physical cut sheets available upon request.

All of our beef is now Cryovaced, this means your beef gets to your home as fresh as it is when the butcher cuts it up. Cryovac also helps increase shelf life without the need for preservatives, and helps freezing too! You get full customisation over how much of each cut of beef you would like in each packet too. Plus each bag is labelled for your convenience.

Dressed Weight is the weight of the whole animal immediately after slaughter and dressed. It contains only meat and bone. The carcass is then hung for a minimum of 10 days in which some weight loss occurs, this is called the drip loss. Hanging for 10 days also means your beef is as tender as possible!
We use DW to calculate your final cost for a number of reasons, firstly it is the most accurate weight as the drip loss is not always consistent making it hard to predict final collection weights. Secondly, we receive this weight two weeks before customer collection allowing for us to send final invoices and receive payments. Finally, the percentage of drip loss is minimal in the total weight of your share resulting in insignificant differences in pricing.
Note that the DW of your share includes bones, thus, the bones that you have the option to collect were included in your final price.

Grass fed and finished beef refers to cattle that are raised on a diet only consisting of grass and forage throughout their entire life. Unlike conventional beef production, where cattle may be fed grain or other supplements prior to slaughter to promote rapid weight gain, grass fed beef ensures that the animals graze in pastures, which supports their natural feeding behaviour.
It also means that they have had ample space to move around, express their natural behaviors and enjoy our open pastures to their fullest.

Grass-fed beef and grain-fed beef differ primarily in the diet of the cattle and the resulting nutritional profile, taste, and thus their environmental impact.
As a quick summary, grass-fed and finished beef comes from cattle that are primarily raised on pasture and consume a diet of grass and forage throughout their entire lives. In contrast, grain-fed beef is produced from cattle that are typically finished on a diet of grains, often in a feedlot setting.
Nutritionally, grass-fed beef tends to be leaner with less total fat than grain-fed beef, but its not just the total fat that is different but the composition of the fat. In grass fed beef studies, they have found it contains between two to six times more omega-3 fatty acids too (the good fat!). Also, it contains more CLA (conjugated linoleic acid), and certain vitamins, such as Vitamin E and A, minerals and also antioxidants. Grain-fed beef on the other hand usually has more marbling, resulting in a more supple and “smooth” texture but can be lower in some of the beneficial nutrients found in grass-fed beef.
But what about its taste? The flavour of grass-fed beef is often described as deeper richer and more earthy taste, reflecting its natural diet, overall a more beefy taste. Grain-fed beef typically has a cereal milder flavor due to the grains that form a significant part of its diet.

We are in a tick free area of QLD, so we have very few problematic diseases etc. in our area. Which means we don’t need to vaccinate at all which is great!
We don't use any antibiotics unless prescribed by our local vet, but we haven't needed to use any for two years now because of our animal health and welfare standards and care. When we do need to use them, we ensure to double the withholding period before sending an animal to slaughter to ensure its fully out of their system.
Hormone injection are unnecessary in any animal production system, we do not use any at all.

We would be classed as “Towards Organic” where we try and limit any and all synthetic herbicides, supplements and fertilizers. In the last year we have only done minor spot spraying with herbicides in our pasture, but we only had to do this once last year. We never spray in a paddock with cows grazing and we don't graze again until the weeds have died and there's no potential for contamination.

As we are only a small farm we don’t have the capabilities to partner with a large cold courier service, but what we can do is meet you at one of our local collection points across south east Queensland! This is a great way to save your self some driving time but also give you a chance to meet us and have a bit of a chat.

Cryovaced beef has a longer than normal shelf life as this process removes all oxygen from the packaging. However, we suggest you aim to freeze your meat as soon as possible after collection. We have not run any specific tests on shelf life so to avoid spoiling freeze and defrost as you need it.

At this stage we only do beef, we occasionally do some of our lambs but we only have a small breeding flock of 4 ewes! So there isn’t much lamb around usually. If you are interested in another meat let us know because there are a number of small farms around us which we can put you in touch with or facilitate an order from.

How much could I save?

Below we took a whole beast, measured all its cuts and compared the prices to a major supermarket, a local premium butcher as well as a budget online wholesaler. This is to give you an idea of how everything compares!
How much freezer space do I need?
Generally speaking, you will be able to fit a 140L freezer will easily fit a quarter share, while a half share will need a 200L freezer. Finally for a whole beast you will likely need a 500L freezer. For some even a quarter share is sometimes too large, here we suggest you team up with a friend or family member and go halves! A great way to get the best value for your money while enjoying the benefits of bulk beef.
Freezer space is often a concern for many people but after your second quarter or your first half you save enough money by buying from us instead of from the supermarket to buy a freezer and pay for the electricity!
How much of each cut do I get?
Quantities of each cut vary between not only animals of different dressed weight but also even the halves in the same animal. But we were curious about this too so we measured on of our recent quarters to find out! Please note that none of these portions are guaranteed and weights will vary even with portions that are the same dressed weight.
